Steamed mussels with sweet chilli & garlic



Ingredients
2 tablespoon olive oil
2 Chillies finely cut
3 tablespoons of Chilli sauce
2 cloves garlic, finely chopped
2 kg mussels (Coromandel, New Zealand, fresh is Best )
Directions
1. Double layer some tine foil and make a base for all your mussels to cook in.
2. Finely chop your garlic, chillies and mix with the olive oil, chilli sauce an season with salt and pepper.
3. Place your mussels on your tin foil base and bring up all four walls, Add your chilli mixture and seal the top with another layer of tin foil.
4. Set BBQ to around 200 and steam mussels till cooked, shells will open. Remove the mussels and half shell to expose the the the mussel.
5. Take the left over chilli sauce which has mixed with mussel juices and drizzle over each mussel, Server on platter, or just eat them off the BBQ like I do.
